Every pouch holds five koufeta — sugared almonds, the heart of a Cypriot wedding. Blessed at the ceremony and given to guests for health, wealth, happiness, fertility and a long life together.
We source our almonds from small family groves around Polis Chrysochous, in western Cyprus, and sugar them slowly in small copper pans, the way Margarita's yiayiá taught her — never machine-tumbled, never glossed.
The result is the imperfect, matte koufeta of Cypriot village weddings: a thin sugar shell, a soft snap, the warm taste of toasted almond underneath.
